Around 400L of whey from Long Paddock Cheese at the Mill in Castlemaine has gone into Shedshaker’s first Whey Stout.
A creation for the Obsidian Dark Beer Festival in Ballarat, the Whey Stout utilises the lactose from whey left behind after fermentation, giving the beer sweet notes and a full body.
Milk stouts usually are brewed with added lactose to get the renowned creamy mouthfeel. Using fresh whey is a more sustainable practice – this whey has done its job for Long Paddock and now gets a second life in this beer.
The result is a full-bodied stout, with a soft, creamy mouthfeel and smooth, roasty finish. There is a touch of sweetness alongside the hints of chocolate from the malts and just a hint of umami from the whey. Perfect for a winter evening in front of the fire with one of those dark, moody, Scandi-noir thriller series on TV.
